Savvy Mom: Parkway Pizza Headed to Northeast

Parkway Pizza of Minneapolis’ Longfellow neighborhood is about to expand. Sam Nestingen is opening the second Parkway location in Northeast Minneapolis, in the spot recently vacated by Nuff sandwiches. He said he’s had an eye on the location for years and hopes they can use it to its full potential. While the exact details of the menu aren’t yet final, Nestingen says the basics of pizza, pasta, and hoagies will be the same. Everything will be available to dine in, take out, or have delivered. The pizza recipe and ingredients will be the same as the Longfellow original, with fresh local ingredients whenever possible from Jerry’s Produce, cheese from Burnett Dairy in Wisconsin, and vegan cheese from the Seward Co-op. Whatever can be made from scratch will be. They’re also planning to do a monthly fundraiser called Dine Out for School, where 5% of revenue for one night a month goes to a particular local school. Nestingen says they hope to open after Thanksgiving but before Christmas, subject to city inspection.
